Good Morning, friends!
Maybe it’s the early winter weather in the Twin Cities that’s making me crave baked goods, but there’s nothing quite like a delicious muffin paired with a cup of coffee on a Saturday morning. With lots of orchard apples on my hands, I made applesauce this past week. Let’s just say that the leftover homemade applesauce plus the overripe bananas on my counter screamed “muffins!”
These goodies are a fantastic way to use up my leftovers from the week. And I am always looking out for ways to avoid food waste. Check back for a blog post about meal planning this next week!
My Magnificent Muffins
There are lots of wonderful muffin recipes out there, but I couldn’t find exactly what I wanted. So, it was time to create my own gluten-free, low-sugar version.
As much as I enjoy baked goods, I don’t look forward to unsatisfied hunger and the inevitable sugar crash. These muffins are a great compromise. Still a treat, but a healthier, more fulfilling option. It’s the hearty oats that keep me full, while most of the sweetness comes from fruit.

Recipe Notes
Since I am gluten free, this recipe was made with gluten free flour, but I imagine it would work well with most types of flour. For my gluten free friends out there, I’ve had the most success with the King Arthur Gluten Free Flour. I’d love to hear if you have other gluten free flour suggestions!
Muffins are the perfect canvas for creativity and substitutions. For example, try adding in dried fruits and nuts. These would be especially delicious with some chopped walnuts or pecans. I just didn’t have any! Looking for some extra fiber? I might add some ground flax or chia seeds next time I make these.
The Recipe
Magnificent Morning Muffins
Ingredients
- 1 Large Egg
- 3 Overripe Bananas
- 1/2 c. Applesauce
- 1/4 c. Maple Syrup
- 3 T. Avocado or Coconut Oil
- 1 1/2 c. Flour I use GF
- 1 c. Old Fashioned Oats
- 1 t. Baking Soda
- 1 t. Baking Powder
- 1/2 t. Salt
- 1 t. Cinnamon
- 1 t. Vanilla Extract
Instructions
- Preheat oven to 375 and grease the muffin tin
- Whisk egg in a large mixing bowl
- Add bananas and mash with a fork until smooth
- Stir in applesauce, avocado oil, maple syrup, and vanilla into the banana and egg mixture
- In a separate bowl, mix dry ingredients
- Mix the wet and dry ingredients together
- Spoon into the muffin tin and stick it in the oven!
- After 15 minutes, check the middle for doneness with a toothpick. If it comes out clean, take the muffins out of the oven.
